Spicy Cucumber Salad

Spicy Cucumber Salad (Tum Mak Dang) is known as smashed cucumber salad made with a mortar and pestle.This refreshing Lao style cucumber salad is similar to the more popular papaya salad (Tum Mak Hoong). Both dishes use the same ingredients but come out slightly different. Cucumbers contain more water than papayas and will naturally have more of a liquid component. It can be served as a delicious snack with vermicelli noodles, pork rinds, or even a side dish to bbq paired with sticky rice.

ingredients

2 Large Cucumbers

4-6 Fresh Thai Chili Peppers

3/4 Tbsp Shrimp Paste

½ Tsp Fish Sauce

1/2 Tsp Salt

1/2 Tsp msg

3/4 Tbsp Sugar

3-4 Garlic Cloves

Shred cucumbers down to the center leaving about an inch of the core. Separate the peeled ribbons and cut 1 core into 4 pieces.

Coarsely pound the fresh chilies and garlic using the mortar and pestle

Three

Add shrimp paste, fish sauce, salt, msg, sugar to the garlic and chilies that’s still in the mortar. Use the pestle to smash ingredients together.

Next you will add 1 core to the mix, using the pestle push down on the pieces to extract the cucumber juices.

Five

Use a spoon to gently mix in the remainder of the shredded cucumbers and allow to sit as the tasty sauce develops.

Six

After 10 minutes stir well once more and adjust to taste. Serve with sticky rice and grilled meats.
